Irresistible Pecan Pie Muffins

Directions:

Preheat oven to 350º.  Grease and flour (or spray with Baker’s Joy) 24 mini muffin cups or use muffin liners.  In a medium bowl, stir contents of mix and make sure all clumps are removed.  In another medium bowl, mix 2 eggs with a mixer for about a minute.  Mix with softened butter just until combined.  Spoon the batter in the muffin cups and bake for 15 to 20 minutes. Remove muffins immediately and let cool.  Enjoy!
